Oh my God, I think I did it. I found a very simple, delicious, satisfying dessert recipe that is good for me! You may find this sooo last decade, but I tried various chia concoctions a few years ago and never landed on something that worked. Here is what I made yesterday (and will be making regularly!):

½ cup + 1 T Almond Breeze almond milk, unsweetened vanilla (or similar)
2 T chia seeds
1 T cocoa powder
1 t vanilla extract
1 packet Stevia-in-the-Raw (or other sweetener, to taste)

Whisk together all ingredients thoroughly in large bowl. Wait 15 minutes. Whisk again. Transfer to small bowl. Refrigerate overnight. Eat! (Suggestion: Top with a sprinkle of chopped nuts and 2 T whipped cream.)

Low in calories, sugar, cholesterol; high in fiber, protein, omega-3s, calcium, potassium and magnesium. Enjoy!
